Uber commission = orders x 52 x average order x plan rate. Your site = orders x 52 x (1.7% x order + 30c) + $99 setup + 12 x $99. Customer fees = orders x 52 x (10% of order capped at $4 + delivery fee).
Sales tax on Uber's commission is left out because a registered shop claims it back, though it leaves your account first. Pick-up orders are the honest caveat: Uber charges 6% on those, so the gain there is about $1.42 per $40 order.
